Individual Parmesan Hash Brown Cups - 3 1/2 cups shredded potatoes (shredded, rinsed & squeezed), 3 diced green onions, 1/2 c grated parmesan, 1 t salt, 1/2 t pepper & 2 T olive oil, stirred & spooned into greased muffin pans (regular sized or mini). Gently pack down with the back of a spoon. Bake at 180C for 60-70 mins in lower 3rd of the oven for better browning. Can be frozen after cooking. Make ahead by refrigerating uncooked muffin tins. Remove from fridge 30 mins before baking time.
