I have to try this!!!.... Had this for breakfast today, it was awesome! Scrambled Egg Tostada: 300 calorie breakfast; toast both sides of corn tortilla and set aside. scramble 1 egg, spread tortilla with 1/2 cup warmed low fat refried black beans and top with egg, 2 tbsp salsa, 1/4 avocado. Drizzle some red enchilada sauce over and you have now got huevos rancheros :)
