Healthy Cinnamon Roasted Almonds 1 egg white 1 tsp vanilla 4 c whole raw almonds 1/2 c zero calorie sweetener 1/2 c light brown sugar 1/2 tsp salt 3 tsp ground cinnamon Preheat oven to 250 degrees. Line a pan with parchment paper. Beat the egg white and vanilla until frothy but not stiff. Add nuts, and stir until well coated. Mix the sweetener, brown sugar, salt, and cinnamon into nut mixture. Toss to coat, spread on pan. Bake 1h 15m, stirring occasionally. Store in airtight container.
