Quinoa tabouleh 1 cup quinoa, rinsed well 1/2 teaspoon salt 2 tablespoons fresh lemon juice 1 garlic clove, minced 1/2 cup extra-virgin olive oil Freshly ground black pepper 1 large English hothouse cucumber or 2 Persian cucumbers, cut into 1/4-inch pieces 1 pint cherry tomatoes, halved 2/3 cup chopped flat-leaf parsley 1/2 cup chopped fresh mint 2 scallions, thinly sliced
Mediterranean style quinoa salad garnished with edible nasturtiums. : ~ 2 cups cooked quinoa, 3 persian cucumbers thinly sliced, 1 tomato diced, 1 avocado diced, chopped green onions, minced cilantro, juice of 1/2 lime, 1/4 cup olive oil, 3 tbl. white balsamic vinegar, salt/pepper to taste, garnish with fresh nasturtiums. Healthy, Fresh, & Delicious!
