Baked Mexican Brown Rice...Serve with beans, warm tortillas and your favorite salsa. (Suggestion: I like to use one can of the Mexican flavored tomatoes with chili peppers instead of the plain 3/4 cup crushed canned tomatoes...just add a bit more flavor!..; Also, I think 2 3/4 cups water may be a bit much. I'll let you know..or you let me know, please.) :)
Chocolate-Banana “Ice Cream” Freeze a banana, then combine with 2 tbsp cocoa powder and blend until smooth and creamy. Dairy-free, 110 calories.

Quinoa, black bean, avocado, red onion, tomato, cilantro, cumin, lime. // This was my first foray into the world of quinoa. When you eat this warm, it tastes like a hearty vegetable chili. Ate it cold the next day on a bed of lettuce. Both were great! Teen Girl tried it and liked it. Teen Boy wouldn't try. Rating: A Keeper
