2 cucumbers- cut up, 1 pint cherry or grape tomatoes (about 30), 2 tablespoons chopped fresh basil, 1 cup fresh mozzarella (I like to use the little balls), 1 avocado, 1 tablespoon extra virgin olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon garlic powder, Salt and pepper to taste
(kids will love) Pancake Bites. Use your favorite pancake mix, pour into muffin tins, add fruit, nuts, sausage, bacon, chocolate chips, etc. Bake at 350 for 12-14 minutes. Awesome for school mornings. :)
PILLOWY SOFT SUGAR COOKIES 1c. butter; 2c. sugar; 2 eggs; 3t. vanilla; 1c. sour cream; 1t. salt; 2t. soda; 5 1/2c. flour: Cream butter & sugar, add eggs & vanilla, then sour cream. Combine dry and mix in. Roll 1/4-1/3" thick. Bake on parchment 7-8min@375. Will look underdone. Cool 5min, remove from parchment. ICING: 1/2c. butter; 4c. 10x sugar; 2t. vanilla; 1/4-1/3c. milk.
