Twice baked breakfast potato: butter insides, add cheese, bacon pieces, top with the egg, salt pepper. Pop into the oven @ 350 for about 15 - 20 minutes. Keep an eye on them, dont over cook the egg. Top with cheese, bacon, green onions and some sour cream. Awesome for busy holiday mornings because you can do all the prep work ahead of time! Then just crack the egg and bake in the morning!!!
