royal icing 4lbs xxx sugar 3/4 c. meringue powder 1 1/3-1 1/2 c. warm water 2-4 tbsp. oil-free extract or flavoring Mix dry ingredients. Add the extract to the water add it to the dry ingredients while mixing. @ 1st icing will be very liquid-like.Continue to mix medium-high speed until fluffy & stiff peaks form, @7-10 minutes. Stop mixing as soon as it becomes stiff.Over mixing & oil-containing extracts can keep icing from setting up, keep this in mind as u work.
