Mmmm... this inspires me to think of so many different versions of spring rolls I can try. Tender curried chicken & creamy avocado with crisp romaine lettuce is the first thing that jumps to mind. Baby spinach, munster cheese, and sauteed portabella mushrooms with a tomato basil dipping sauce. Oh, and I would love to try making a version of my Peanut Pad Thai as a spring roll. Mmm, yum.
