Football Season! Buffalo chicken rolls, 100 calories, baked not fried...what's not to love!

    Made these with wonton wrappers so they were mini's..used green onion instead of cabbage and no cheese inside. i served them with ranch and blue cheese dip, celery stick and carrot sticks too.

Creamy Chicken, Spinach and Tortellini Soup - I made this last night and it was very good, it made a large pot. Little bit of prep work involved but worth it. I teaspoon of the red pepper flakes was almost too much! I also used herbs that I had on hand...poultry seasoning, rosemary, thyme, cinnamon and nutmeg. I think you could use your own combo of herbs to your taste. (I couldn't really taste the cinnamon & nutmeg though.) Leftovers for tonight, it may even taste better.

chimichuri sauce, from the recipe on my Yummy stuff board, easy to make in my mini food processor and delish! served on grilled london broil...YUM! This one is a keeper!

    Chimichurri Recipe INGREDIENTS 1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems 3-4 garlic cloves 2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano) 1/2 cup olive oil 2 Tbsp red or white wine vinegar 1 teaspoon sea salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon red pepper flakes METHOD 1 Finely chop the parsley, fresh oregano, and garlic (or process in a food processor several pulses). Place in a small bowl. 2 Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings. Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two. Serves 4

Here's my take on the Chicken Crescent Roll Bake. Chopped chicken, bacon and onion with chive flavored cream cheese and garlic powder for the filling. Cream of chicken & mushroom soup, 1/2 milk, and 3/4 cups shredded Colby jack cheese for sauce. 2 cans of the big & buttery Pillsbury crescent rolls, used two rolls for each one (rectangle shape) rolled up and sealed. Place in pan with a little sauce on bottom, pour the rest of the sauce on top. 350 for 30 minutes. made 8. YUM!

Here's the corn cassarole...looked and smelled delish! Tasted good, not great. Very greasy (1/2 cup butter is why) next time (if there is one) I will use only a tablespoon of butter!
