Rhubarb Pie- This is very close to the recipe I use from my great grandmother. I don't usually use cinnomon in mine but everything else is the same. I also usually cook my pies at 425 degrees for the first 15 minutes and then turn it down to 350 degress for 40-50 more. This seals the pie really quick and then makes sure the fruit gets completely done.You can also lower the amount of rhubarb by 1 C. and add 1 C. of strawberries instead to make a Strawberry/Rhubarb Pie. It's just as good.

Loaded Alfredo with Chicken and Vegetables! (from Mens Health Magazine) This is soooo good and way better for you than Olive Garden alfredo sauce!
Spinach-Artichoke Dip. Read the reviews for advice on modifications. Most importantly: add garlic salt (to taste), double the cream cheese, increase the mozzarella, and use the whole jar of Alfredo sauce (even if it's larger than called for). I like to double the recipe and freeze leftovers in ziplock bags. I think roasting the garlic is worth the extra time, but I skip baking the dip and just toss it all in the crockpot.
Tater Tot Taco Casserole - "Just what the grand kids ordered. Tater tots, Mexican food, and cheese! This is one of those meals that you can throw together with ingredients you would normally have on hand. Great for pot luck or a quick meal for unexpected company. Some kids don't like onion or garlic; these can be omitted."
