BREAKFAST :: Clean eating Egg muffin. Made enough for 12 muffins: 1/2 pepper, 1 cup mushrooms, 2 cups chopped spinach. Used 1 dozen whole organic eggs .cups were to the top when I put them in the oven. 350 degrees, 20-30 minutes

Greek Marinated Chicken ~ 1 cup plain yogurt 2 Tbsp olive oil 4 cloves garlic, minced ½ Tbsp dried oregano 1 medium lemon zest juice from 1/2 lemon ½ tsp salt freshly cracked pepper ¼ bunch fresh parsley 3½ to 4 lbs chicken pieces ~ Combine marinade. Place pieces in marinade in gallon ziplock. Bake 375 45-60 minutes or grill

I left them in the volunteer room at school and apparently fights almost broke out over them! There's no better gauge than that ;)

Crock Pot Pork Chops and Mushrooms - made these for dinner tonight and they were AWESOME! So tender we didn't even need a knife. Used fresh mushrooms instead of canned and sauteed the onions and mushrooms to caramelize them a bit before adding to the crockpot. Definitely goes in the Keep file.
