Walnut crusted salmon: 1/2 c panko, 1/2 c crushed walnuts, 1 lb salmon fillets, 1/4 t sea salt, 1/4 t pepper, 3 T lemon juice. preheat oven to 425. In a small bowl, combine panko and walnuts. Place salmon fillets in a large baking dish. Sprinkle with salt and pepper; drizzle with lemon juice. Press panko mixture on the top. Place in oven and bake 15 min.

One of my favorite all time veggie side dishes is roasted cauliflower. So YUMMY! I just thaw cauliflower and toss it in a bag with olive oil and minced garlic, shake around, then lay out in a pan and sprinkle with parmesan cheese. Cook high, like at 450 degrees or so, stirring off and on and adding more parmesan if you want. I just watch it until it gets brown. YUM!

Wild Rice and Mushroom Pilaf - SO. GOOD. Couldn't find plain wild rice so used a box of Uncle Ben's Long Grain and Wild Rice - Herb Roasted Chicken flavor. Used about 3/4 of the seasoning packet and replaced the water with broth, like this recipe suggests. Turned out amazingly delicious.
