Tomato-Pesto Frittata 8 eggs 1/3 c basil pesto, 1 c shredded mozzarella (4 oz),1 t olive oil, 2 small tomatoes, thinly sliced oven to 425 degrees. In bowl, beat eggs. Stir in pesto, 3/4 t salt, 1/4 t pepper, and 3/4 cup mozzarella. In a 10-inch nonstick skillet, heat oil over medium-high. Add egg mixture, stirring occasionally, 1 to 2 minutes.
