When you get your berries home, prepare a mixture of one part vinegar (white or apple cider) and ten parts water. Dump the berries into the mixture and swirl around. Drain, rinse if you want (though the mixture is so diluted you can't taste the vinegar,) and pop in the fridge. The vinegar kills any mold spores and other bacteria on the surface. Homemade cheese: Bring 2 litres of full-fat milk to the boil. Remove from heat and gently stir juice of 1 lemon (about 2 tbsp). Mix well. Let it rest for 1 hour or so. Pour into fine mesh sieve (or use a cheese cloth) and let it rest for 2 hours. Season and... voila! Could not be easier.
