Been There, Done That

Pumpkin Spice Latte Cupcakes - I made these just the other night and they were amazing. It has a very warm flavor that is perfect for the fall and winter. One suggestion, make the caramel the day before to give it time to thicken. I didn't and it was a bit runny but it still had an amazing flavor.

Lemon Melting Moments. These good just not as good as I thought they would be. I didn't have cornstarch though and had to substitute for double the flour so it might make a difference if you had cornstarch.

Creamy Lemon Crumb Squares from the Pioneer Woman These lemon bars are very good. A 9X13 pan is a little bit large for this recipe so if possible use a little bit smaller pan. And I might use a little bit more butter or something in the crust. The crust tastes good but doesn't stay together well and makes a lot of crumbs.

Delicious breakfast: Apple Rings Dipped in pancake batter. Cook on a griddle and add cinnamon and sugar! These are good. Definitely more work than pancakes but you do get some fruit in there.

Hot dog octopus. These are so fun and kids love them. I live at an orphanage in Mexico and I made these with Mac and cheese one night. I had a pan of about 80 of them and they were so cute. The kids absolutely loved them and thought it was the coolest thing ever. Especially cute with pasta shells.

Melt in Your Mouth Chicken Breast, 1/2 c parmesan cheese,1 c mayo, 1 tsp garlic powder, 1 1/2 tsp seasoning salt 1/2 tsp pepper,spread mix over chicken breasts, bake at 375 45 mins. This recipe is a keeper. The chicken is moist and flavorful. I love seasoning salt.

Cook a pierced potato in the microwave until it’s soft all the way through – about 6-7 minutes total, flipping over every 1-2 minutes. Cut the potato in half, then cut each half into squares. Don’t cut all the way through, just down to the skin. Season with butter, parmesan cheese and Lowry’s seasoning salt, then pop them into the middle rack of your oven set to broil for 10-15 minutes. This sounds yummy. These turned out to be really good and easy. Definitely something I will do again.

Sliced baked potatoes: thinly slice almost all the way through. drizzle with butter, olive oil, salt and pepper. bake at 425 for about 40 min. These were ok. I don't think that I cooked them quite long enough and they needed more seasoning. But I might try them again.
