QUINOA CAULIFLOWER PATTIES 1 cup quinoa 1 1/2 cups cauliflower florets 4 eggs 6 scallions, white and green parts 3/4 cup rolled oats sea salt and pepper 1 1/3 cup shee... Dressing: in the food processor blend garlic, tahini, lemon, chives, cilantro, olive oil and a teeny splash of white wine vinegar.

Creamy Yogurt Mac & Cheese serves 6 8 oz. elbow pasta 8 oz. sharp cheddar shredded cheese 1/2 cup greek yogurt 2 cups fresh spinach S 1/4 tsp onion pwdr 1/4 tsp garlic pwdr Cook the macaroni (about 8-10 minutes). Place the spinach leaves in bottom of strainer, & pour pasta over top to drain and wilt spinach. Return the macaroni & spinach to the pot. Add 1/4 cup of the pasta water to the pot, & stir in cheese until melted. Stir in greek yogurt, onion & garlic, S until smooth & creamy.
