Chocolate ice cream 2c steamed cooled cauliflower 10 oz water - Idid 5 water 5 cream (more creamier ) 3 TB cocoa 1 tsp vanilla Sweetener ( I did 1 TB sweet blend and 4 scoop of xylithol) 1 scoop protein (I used vanilla) optional 1 Tsp peanut butter (I did without because I plan on a little whip cream) Blend well pour into ice cream make
Old Fashioned Oats Granola (E): 4 cups old fashioned oats, 2-3 Tbsp. sweetener, 2 Tbsp. virgin coconut oil, ½ tsp vanilla extract or almond extract, 1 large pinch fine sea salt. Mix ingredients well. Spread evenly on baking tray. Bake in oven 300 degrees for 10 minutes. Toast longer until desired crunchiness, stirring every 10 minutes. Excellent with sweetened Greek yogurt and berries (like a parfait) or eaten stand alone with a protein smoothie.
THM - Chocolate Chip Coconut Cookie (like a muffin in a mug (MIM) but more cookie texture) - In a Coffee cup mix - 1 egg whipped, 1 TBS Almond Meal/Flour, 1 TBS Golden flax meal, 1 tsp baking powder, 1/2 TBS coconut flour, 1 TBS coconut flakes(optional), 1 TBS 85% dark chocolate chips. 1/2 TBS soft or melted butter. 1 pack truvia, 1 TSP xylitol, 1 TSP chopped pecans (optional) Mix all together well with a fork, microwave 1 minute, let sit for 5 minutes & enjoy. Note the coconut flour is important as it gives it the more cookie consistency. Because it only has 1tsp of fat it can be S or E snack or dessert!
