Baked Zucchini Chips! Zucchini, canola cooking spray, seasoned salt or other seasoning(s). Spray parchment paper or nonstick foil with canola oil. Slice zucchini into thin medallions. Lay out slices on prepared baking sheet, and spray tops lightly with additional cooking spray. Season. Bake 30 min, rotate, and bake 30-50 additional mins.

Zucchini Fritters with Tzatziki Serves 2, Yield=6 2 cups coarsely grated zucchini 1/2 cup coarsely grated potato kosher salt pinch of flour 1 egg 1 tablespoon chopped chives (or whatever herb you like) 1 tablespoon chopped mint (or whatever herb you like) zest of one lemon 1/4 cup diced white onion 1 tablespoon unsalted butter Tzatziki: 1 cup Greek yogurt 2 T. finely diced red onion 1 T. chopped mint kosher salt squeeze of lemon juice

Asparagus Phyllo Appetizers -- 1 Package phyllo dough;1 stick unsalted butter, melted;1 bunch green asparagus, trimmed;½ cup parmesan cheese, grated;Coarse ground black pepper;½ cup mayonnaise;1 tbsp grated horseradish;1 tsp capers, minced;2 tsp whole seed mustard;salt and pepper to taste. For the sauce, mix mayo, horseradish, capers, seasonings. Blanch asparagus. Wrap in phyllo, buttering & putting cheese between three layers. Bake at 350 for 15 minutes.
