I think next time I'll brown up some mushrooms in the bacon drippings to add a little more depth of flavor. Yum and gluten-free, to boot.

A new obsession. Roasted Okra - Toss w/ olive oil, salt, pepper. Roast in oven at 425 for15-25 minutes depending on how crispy you prefer. Tastes like fries!

Snow day! Paula Deans crockpot potato soup recipe. Combine 1 bag frozen hash browns, 2 (14oz) cans chicken broth, 1 can cream of chicken soup, 1/2c chopped onion, 1/3tsp black pepper. Cook in crock pot on low for 5hours. Stir in 8oz block of cream cheese, cook 30 minutes, stir occasionally. Great idea minus the cream cheese.

4-6 raw chicken breasts, new potatoes, green beans (fresh or canned). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!

spaghetti squash au gratin: tastes like hashbrown casserole (without the carbs)

Easiest breakfast ever! 1/4 cup oats, 1 egg, 1 tsp brown sugar, handful blueberries, splash of milk, dash cinnamon. Mix it all up. Stick in coffee mug in microwave for 2 minutes. Super yummy!
