Lavender- Can be a bit tricky to grow, but it can thrive in the right conditions. It likes it hot, sunny, and dry. mix a bit of sand in the soil when planting and fertilize with lime (lavender HATES acidity!) It can get woody after a few years if not pruned regularly in the fall. Prune almost to the ground to ensure fullness next year.

Know your soil - do a Mason Jar Soil Test. I did this years ago when I first started gardening. I ended up adding sand to my garden spot. I have had poor soil conditions for the last 10 years or so and have added organic material and composted material to improve my soil condition. The mason jar test is a great place to start.
