These really are yummy! And with the quinoa and whole wheat flour, better for you than most cookies. I put closer to 1 1/2 cups quinoa (1/2 cup cooked made 1 1/2 cup cooked, and I hate to toss the remainder or have it take up room in my fridge). I also don't like almond extract and used some rum and coconut extract.
