Fresh green salads
Cold Lemon Pasta Salad-meant to be made the day before and served cold. Gorgeous on a buffet table! Ingredients: 1 tablespoon olive oil 2 cloves garlic, minced 1 cup heavy cream 1 cup chicken broth 1-2 lemons (juice and zest) 2 tsp kosher salt 1 tsp black pepper 1 pound pasta 1/2 cup freshly grated Parmesan or Romano cheese - ½-1 bag of baby arugula - 1 pint grape tomatoes, halved - 1 10 oz package of frozen peas, thawed
Cold Lemon Pasta Salad
Broccoli salad. Rave reviews from club. For smaller broccoli, use knife shaving florets tiny pieces. Head broccoli; 4 slices cooked bacon, crumbled; ½ c. red onion, chopped; ½ c. raisins; ¾ c. mayo; 2 tbsp white vinegar; 1 ½ tbsp honey; ¼ c. roasted no salt added sunflower seed kernels; salt+pepper to taste. Mix well. mayo, vinegar, honey, salt. Set aside. Mix broccoli, bacon, onion+raisins. Gently stir in mayo dressing. Sprinkle with sunflower seeds+serve.
