Bird's Nest Breakfast Cups: These have quickly become a weekend favorite. I make an entire pan full and then the hubby has a yummy, wholesome breakfast to grab and take with him as he's running out the door at the crack of dawn. Omg!!! Why have i never thought of this?! Mix pancake mix as directed and add cooked sausage crumbles. Spray mini muffin tin with Pam and full with pancake batter. Sprinkle the extra sausage on top and bake at 350 for 13 minutes or until golden brown. Serve with butter and syrup. Enjoy these delicious bites! Could even use bacon!
HEALTHY BREAKFAST COOKIES (adapted from Wise Bread) 3 mashed bananas 1/3 cup apple sauce 2 cups uncooked quick-cooking oats 1/4 cup skim milk 1/2 cup craisins 1/3 cup pecans, chopped 1/3 cup sunflower seeds 1 tsp vanilla 1 T cinnamon 1 T sugar Mix all ingredients together. Spoon the dough by teaspoonful onto a greased cookie sheet. Bake at 350 for 15 minutes. Cool and serve. Leftovers can be frozen.
