Asparagus, red potatoes, and garlic. Healthy and super easy side dish. Looks like on the recipe, cook the potatoes and garlic for a bit on their own then add the asparagus, to avoid overcooking..I love crunchy asparagus, so that would be my recommendation..that way Daniel can pick out the greens too. :)

Cheesy Cream Corn
Apple Bacon Coleslaw. I made this as a side dish for our Mother's Day cookout. I followed the recipe except that I used 2 large apples instead of 4. Everyone loved it and I even sent left-overs home with people. Unless you are serving a dozen people like I did, you may want to cut the recipe in half.

Asparagus Mushroom Crustless Quiche 4 Asparagus Spears sliced 1" 4 Mushrooms sliced 1/2 tsp tarragon 6 Large Eggs 1/3 c half & half 2oz. low fat cream cheese 1/3 c Bisquick 12 grape tomatos 2 individual 5" pie plates; add asparagus, mushrooms & tarragon; Mix remaining ingredients excluding tomatoes; divide mixture between 2 plates; top grape tomatoes cut side up; Bake 375, 30 min
Asparagus Mushroom Crustless Quiche
Spread frozen corn on baking sheet, sprinkle with olive oil and salt & pepper. Broil for 5 minutes. This is my new favorite way to cook corn! I love that you can use frozen corn, and it was SO easy!
Tomato & Corn Picnic Salad
Gotta try this! Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste:)

The Bojon Gourmet: Sweet Corn Cheddar Spoonbread
Incredible Baked Meatballs. 1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
