Simple Garlic and Basil Pesto Recipe - I tried to use this as a base recipe, but ended up changing a lot. I did use 3 cups chopped basil, but only about 1/4 c olive oil, 2/3 c shredded Romano or Parmesan cheese, 3 cloves of garlic, 2/3 cup walnuts, and a few dashes of salt. It worked best to make it in the blender.
Italian Chicken. I've never used a recipe, but this is pretty much what I do. Just marinate chicken breast in italian dressing (I use low-/non-fat) and bake. I'll often lightly coat the chicken in Italian style panko or regular bread crumbs, or even just crushed Ritz crackers mixed with Italian seasonings. Gives it a little crunch.
