easiest pulled pork recipe. Pork butt, 1 can diet pepsi, 1/2 bottle sweet baby ray's BBQ sauce and lawry's season salt. Coat pork with Lawry's, put all ingredients in crock pot and cook for 4 hours,then use 2 forks to shred the pork and cook for 1 more hour. Serve on kaiser roll, delish! Omit the Pepsi if you don't care for sweet pulled pork. HMmm......
Freeze ahead crock pot meals...ok, usually the freeze ahead meals are full of sugar or things we'd never eat, but these are actually good for you and are things we'd eat and could adapt to our new foods list. (no lift lid for 3 hrs) turn off cooker. sprinkle w marshmallows and syrup. enjoy

Brown sugar garlic chicken - 4-5 chicken breasts, cut - 1 cup packed brown sugar - 2/3 cup vinegar - 1/4 cup sprite or 7-up soda - 2 -3 tbls minced garlic - 2 tbls soy sauce - 1 tsp (regular black or cayenne) place chicken in crock pot. mix all remaining ingredients and pour over chicken. cook on low for 6-8 hours. serve over rice or noodles.
