Zucchini Chips These are good--and I've done them with squash too! I slice them thin, dip in egg/milk mixture then roll in original flavored bread crumbs with panko. Salt, pepper, paprika and spray the top with olive oil cooking spray. Bake at 350 until brown and crisp. We like them dipped in Ranch dressing, but tonight I'm going to mix up some "fake" Cane's sauce!

Sea scallops and parmesan risotto - made this tonight. First risotto ever. My husband has watched "Hell's Kitchen" one too many times. He was scared :) It turned out perfect! This recipe was really, really good. Sweet scallops, delicious risotto with wilted spinach in between. Fresh fruit and French bread completed the meal. Husband loved it and I would definitely make again! Diane
