Sweet Potato Hash with Sausage & Eggs
Low-Roasted sweet potatoes -- slice sweet potatoes into 1/2 inch rounds. Brush both sides with olive oil. Sprinkle generously with salt and pepper. Roast at 350 for 30 minutes, turning once. Raise temp to 400. Roast 15 – 20 minutes until golden brown

White Bean and Sausage Stew in Pumpkin Bowls. It might be a lot of work to get the pumpkin cleaned out for a bowl, but it would be worth it for a fall dinner party. :)
