Chicken Quinoa Soup. Heat 2 teaspoons canola oil in a pot; cook 1 diced onion and 2 sliced carrots for 6 minutes. Add 1 pound thinly sliced boneless raw chicken thighs, 1 cup sliced mushrooms, 2 sliced celery stalks, and 2 minced garlic cloves; cook 5 minutes. Add 4 cups chicken broth, 1 cup water, 3/4 cup quinoa, 4 sprigs thyme, and salt and pepper. Boil, reduce heat, and simmer about 15 minutes, til quinoa is tender. Top with parsley and hot sauce.
This is our favorite way to eat broccoli of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.
best broccoli...olive oil, salt, pepper, garlic, 425 for about 20 minutes....then top with parmesan cheese and lemon juice! I do a lot of veggies like this.

Preserving Avocado in the Freezer ~ Great idea for when avocados are on cheap. Ingredients: 5 ripe avocados; 5 TBS lemon juice. Directions: Slice the avocados in half and discard pits. Scoop the flesh from the peels. Mash the avocados, then add the lemon juice. Mix well. Spoon into zip top bags, squeezing out all the air before sealing. Freeze up to one year.
