Lemon Poppy Seed Muffins (grain-free, sugar-free, dairy-free & low carb)

THM Bread in a “Mug” in a Loaf in the Oven:) - S 6 Eggs ¾ Cup Ground Flax ¾ Cup Almond Flour 1 TBS Baking Powder 1 tsp Salt 2 TBS Coconut Oil Butter for Pan Turn oven 350. Put eggs in large mixing bowl, mix with hand mixer. Dump in all ingredients and mix. Grease regular size bread loaf pan with LOTS of butter. Pour dough into pan. Bake 350 for 25 minutes (or until golden brown, don’t over bake though). Place on cooling rack until completely cooled. Store in a ziplock in the fridge.

THM S Whipped Peppermint Mocha (makes about 4 servings): 1 cup of heavy whipping cream, 5-10 drops of peppermint extract (taste it- I like mine extra minty), truvia to taste, 1/4 tsp salt. Whip in a food processer on high for 10 minutes until it becomes whipped cream. Drop in a spoonful over hot coffee mixed with cocoa powder and top with additional cocoa powder or skinny chocolate.

Chicken Chile (E) 1 lb Great Northern Beans (soaked overnight)* 5 cups of Chicken Broth* 3 Cloves of Garlic (minced) * 1 onion (diced) * 1 8oz can diced green chilies * 2 tsp Cumin * 2 tsp Oregano * ¼ tsp cloves* ¼ tsp Cayenne Pepper * 2 tsp salt * 4 to 6 frozen Chicken breast * Put all ingredients into the crock pot and cook for 6 to 8 hours on low until chicken shreds easily. Top with Greek Yogurt or low fat Sour Cream with green onions and fresh tomatoes or salsa.
