Crock pot breakfast casserole. Update: made this Sept. 13, 2012 and it was awesome! I didn't actually make it in the crockpot, but did one layer each of the different things (hashbrowns, meat (I used sausage), peppers/onions, and cheese/chives and baked it in a greased 9X13 pan in a 375 degree oven for 45-50 minutes. I had it uncovered for about 35 minutes, then put some foil on for the remainder of the time. It was SO tasty--will make again! I also sauteed the onions & peppers in butter first.
