Chocolate Zucchini Muffins - made yesterday...they are soooo good. Easy to make, a little time consuming first time around as I've never baked with zuccini before but worth it. Best part....kids ate them up and asked for more didnt even know they were eating healthy muffins!
Sweet corn & zucchini fritters: 1 1/2 cups self-rising flour 1 cup milk 2 eggs 2 corn cobs, kernels removed 1 zucchini, grated oil for shallow-frying Whisk flour, eggs and milk together until smooth. Add corn and zucchini. Fry until golden, flip and repeat.
