Spaghetti Pie from Center Cut Cook. Just as tasty and cheesy as lasagna, but much easier. Feeds a large crowd, easy to make ahead, and great as leftovers. Can be adapted to fit low-fat or low-carb (using spaghetti squash) diets.
Absolutely one of my favorite recipes to make, super simple and sooo good! Do have to warn it does make you thirsty. Always pair this with Lipton Soup Onion Soup mix potato recipe, and a veggie and it's a hit with all my picky eaters in my house :)
Crockpot vegetarian chili with sweet potatoes - i think i love the background as much as the soup - this turned out great and i'd highly recommend it. changes: (1) tripled the sweet potato/cumin/chili powder, (2) doubled the black beans & garlic, (3) left out the other beans, (4) halved the tomatoes, (5) sauteed the onion, and (6) used chicken broth in lieu of water.

RANCH CHICKEN Combine: 3/4 cup crushed cornflakes. 3/4 cup parmesan cheese. 1 packet of hidden valley ranch dressing mix. Dip 8 chicken halves in melted butter and then roll in cornflake mix. Place in greased 9x13 pan. Bake @ 350 for 45 min. Best. Chicken. Ever!
