I hate making dinner... These recipes help me hate it less. All vegetarian (because I am), focused on great flavors & simple execution.

Brown Rice Bowl with Lemongrass, Tofu, and Cashews
North Indian saag paneer—meltingly soft spinach strewn with chunks of fresh cheese—is amazing especially when scooped up with hot flatbread.
Mango Guacamole... How good would this be as a layer dip with some smoky refried black beans on the bottom & cotija crumbles on top? Alongside chipotle scrambled eggs & a few tortilla chips... I'd eat that for dinner!
