Boyfriend doesn't like eating too many carbs, but he loves my lasagna! Trying this next time I visit him.

    After you slice the zucchini cover them in salt. That will draw out the water, do both sides and just wipe it off before you cook.

    Yes the salt method will work too. I find it's sort of messy so I just slice my zucchini and bake them on a little rack lined baking dish while I prep the sauce and other vegetables. Because the oven has to preheat to bake the pasta dish anyways. Salting works on eggplant and all watery vegetables.
