Menu Musings of a Modern American Mom: Loaded Hasselback Potatoes

Plastic Canvas Cross - I love making these. I have been making these for years and have made hundreds, but I have never seen a pattern before now. I saw one and copied it pretty closely. For those who have asked me for the pattern, this is probably easier to follow than my instructions!

Quinoa Corn & Avo Salad

The Skinny Tuna Melt - Classic comfort diner food, just got a make-over... the low fat tuna melt. Adding veggies to your tuna, replacing the full fat cheese and mayonnaise with light mayo and cheese and serving it opened faced makes this classic sandwich lower in fat and Weight Watcher friendly. Use your favorite whole grain bread and serve with a salad or a cup of soup on the side.

Another pinner said: A friend of mine brought me this when I had surgery. Now it is my "go to" dish for taking to people who have had babies, surgery, etc. 4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!

Cream Cheese Pound Cake - literally the BEST pound cake recipe. This is the same as the recipe found in Southern Living 20 years ago. LOVE IT!
