In honesty, I just keep my sweet potatoes somewhere warm & dark & when they sprout on their own, cut off that segment of the potato (leaving a decent wedge around the sprout(s), place the cutting in a bowl of water (planting once they have roots) and eat the rest. I do always select potatoes that are plump, firm, and not yet dried-out or dessicated, though, which helps.

I LOVE this idea and it would be perfect in a raised bed garden!!! Make a basic wooden frame, staple chicken wire over it. Place the wire frame at an angle on attached legs. You then use as a cucumber trellis and plant lettuce underneath! The cucumber vines won't strangle out anything else and the lettuce grows better with partial shade!!
