2 cups cooked corn, fresh or frozen (see Note) 1-2 avocados, cut into 1/2-inch cubes 1 pint cherry or grape tomatoes, halved 1/2 cup finely diced red onion Dressing: 2 tablespoons olive oil 1/2 teaspoon grated lime zest 1 tablespoon fresh lime juice 1/4 cup chopped cilantro 1/4 teaspoon salt 1/4 teaspoon pepper
Ramen Noodle Salad, I love this salad! 2 pks noodles, 2.5 oz. bag sliced almonds, 3/4 C sunflower seeds, 1/2 C chopped red onion, 1 bag broccoli slaw, both seasoning pkts, 3/4 C oil, 1/2 C vinegar, 1/3 C sugar, grilled chicken. Combine first 5 ingredients. In separate bowl, combine next 4 ingredients. Pour over noodle mix. Top with chicken. Mix. Refrigerate at least 4 hours. Mix again. Enjoy!!
