Pecan Pie Cupcakes. 1 cup chopped pecans 1/2 cup all-purpose flour 1 cup packed brown sugar 2/3 cup butter, melted 2 eggs. Combine all ingredients in a medium bow and mix well. Spray a miniature muffin tin with non-stick cooking spray. (The spray with flour in it works best!) Fill each indention 3/4 of the way full. Bake at 350 for 18 mins.
