Quinoa Breakfast Bites 1 C cooked quinoa, warmed 1/2 C shredded mozzarella or cheddar 2 egg whites 1 clove garlic, minced 1 t salt 1/3 C chopped fresh spinach leaves Oven 350 degrees spray a mini muffin tin Mix warm quinoa w cheese to melt the cheese.
