Quinoa Quiche 2 cups cooked quinoa (3/4ths uncooked) 8 eggs 1lb frozen broccoli florets chopped 2 cups cheddar cheese Celtic sea salt Pepper 1/4 cup Parmesan cheese Preheat oven to 350 degrees. Add all ingredients to a large bowl and mix well. Spray muffin tins with nonstick spray. Fill to the top of the muffin tins. Bake 20-30 minutes or until golden brown around edges. Let cool for 5 minutes. Don't underbake because they will not come out of the pan. Makes 24 quinoa quiches.

Sprouting Mung Beans Take a small amount of beans, maybe half an inch on the bottom of a jar, and soak them in water 8 hours or over night. Then, drain them, rinse them well with cool water and drain again. Rinse and drain them once a day for 5-8 days depending on preference. Don't forget to cover with a paper towel or mesh screen. They seem to get more bitter as days go by. Shake the jar 1-4 times daily as well. <---this is not a necessity but does seem to help!
