Fall breakfast idea: Low-fat vanilla yogurt (½ cup) with 2 tablespoons canned pumpkin plus a pinch of pumpkin pie spice.
Clean Eating Pumpkin Spice Latte (Makes 2 lattes) Ingredients 4 tbsp. ground coffee, 1 tbsp. pumpkin spice (no sugar added, just the spice mix), 2-1/2 cups water, 2 cups unsweetened vanilla almond milk OR…2 cups regular milk + 1/2 tsp. vanilla extract, 2 tbsp. pure maple syrup.
Pancake Bites. Use your favorite pancake mix, pour into muffin tins, add fruit, nuts, sausage, bacon, chocolate chips, etc. Bake at 350 for 12-14 minutes. Awesome for school mornings. :)
French Toast Roll-Ups...these roll-ups have hot, gooey fillings stuffed into the middle of them with golden-brown, buttery outsides coated in a sweet, crunchy cinnamon sugar that all but melts in your mouth.
Cinnamon Streusel Baked French Toast This was so amazing. I made it for brunch this weekend and everyone asked for the recipe. I baked it for 50 minutes and it came out soft and chewy on the inside with a delicious cinnamon sugar crust on the outside. The house smelled so good when it was cooking. It was also great to prepare it the night before and just pop it in the oven before my guests arrived. I love easy entertaining recipes.
