A one-dish, slow-cooker tex mex quinoa casserole. This casserole is bursting with fresh and healthy flavors with some good spice. This dish is vegetarian, but chicken, ground beef, or ground turkey can easily be added in.

Slow-Cooker-Quinoa-Chili-Chicken

Chex Mix in crockpot --5 Cups General Mills Rice Chex Cereal --1-2 cups of dry roasted peanuts (salted or not, your choice) --2 cups pretzel sticks (I used Glutino) --1/2 t onion powder --1/2 t seasoned salt --3 T butter --1 1/2 T Worcestershire Sauce (Lea and Perrins is GF.) Low 2-3 hours - stir - careful not to burn

Chicken taco chili: about 200 calories per serving and makes eight servings! 1 can black beans, 1 can kidney beans, 1 can corn kernels, 16 oz tomato sauce, 28 oz diced tomatoes, packet taco seasoning, 1 tbsp chili powder, 3 boneless chicken breasts. Six hours on high or 10 hours on low in the crock pot.

Healthy Santa Fe Chicken (crock pot) 1C= 4 WW Pts+. A WINNER!!! I had 3 lbs of chicken (4 lg chicken breasts), so I made a double batch, however, I didn't double the broth or cayenne pepper. Next time my only change will be to keep the cilantro out and use it as a garnish with the green onions. We also topped this with shredded cheese and sour cream. SO YUMMY!!!

1 can creamed corn, 1 can sweet corn, 1 stick light margarine, 1 cup elbow macaroni, 1 cup velveeta. Don't drain any cans. Add salt and pepper to taste. Cook in crockpot until noodles are done.

Crock Pot Taco Soup.

Crockpot Corn Chowder 4 potatoes (peeled and diced) 1 Can of cream corn 1 Can of whole kernel corn 2 Cups of chicken broth 8 Ounces of diced ham 1 Cups of diced onions 1/4 Cups of butter 2 Cups of half and half Place potatoes, both cans of corn, chicken broth, ham, and onions into the slow cooker. Cook on low for 7-8 hours. Mash the mixture to your desired consistency and then add the butter and half and half. Cook for an additional 30 minutes on high, and you are set.

Crock Pot Ham. Would be great for the holidays! Cover the bottom of the crock with brown sugar. Place ham on top of the brown sugar and add pineapple tidbits with the juice. Sprinkle ham with more brown sugar. Cover and cook on low for 7-8 hours.

Smothered Chile Colorado Burritos (CROCK POT)! It doesn't get much easier or delicious than this meal! It is fantastic!
