Mexican Sour Cream Rice-this is awesome! Great Mexican side dish! 1 cup uncooked long grain white rice 1 (14 ounce) can chicken broth 1 cup sour cream 1 (4 ounce) can diced green chile peppers 2 cups shredded pepper Jack cheese, divided 1 1/2 cups frozen corn 1/4 cup finely chopped fresh cilantro salt and ground black pepper to taste

Chicken breasts, enchilada sauce, taco seasoning, shredded cheese, and green onions. add some cilantro to the top, then served up in soft tortillas with rice. YUMMY and EASY

EASY HOMEMADE FLOUR TORTILLAS 3 cups flour 1 tsp. salt 1/3 cup vegetable oil 1 cup warm water Combine all the flour, salt, vegetable oil, and water until it forms a dough. Roll the dough into a big ball and take about an 1 to 2 inch pieces off. Pat the dough flat with your hands or take a rolling pin and roll into circles. Put the dough on a flat pan on the stove and let the sides cook until there are little brown specks on both sides like you would see on other tortillas.

Taco Macaroni and Cheese... 1 pound macaroni or shell pasta 1 pound ground beef 1 onion, chopped 2 cloves garlic, minced 1 serving of taco seasoning (or 1 packet of store-bought seasoning mix) 1 cup salsa 1 8-ounce package cream cheese, cut into chunks 2 cups milk 1/2 cup sour cream 2 cups shredded Mexican cheese blend

Week-night.... Dump 1 envelope of taco seasoning, 6 boneless, skinless chicken breasts a jar of salsa in the crockpot, stir and cook on high(4-6 hrs.) or low(6-8 hrs.) Should be able to shred with a fork. Place meat mixture in tortillas and top with your favorite toppings!
