I’ve had a passion of Italian food for as long as I can recall! If I believed in after-life, I’m sure I would have been an Italian chef with an addition to French pastry in my previous incarnation :-> I love all of it, from the wonderfully rich traditional, rustic dishes to the elaborate, refined gourmet dishes. #ItalianBrunch ~ My Italian Country Paté: a fragrant mixture of meats, wine, reggiano, fresh herbs, etc, baked for 2 hours; served at room temp with a selection of vegetables & salads. A simple feast of fragrant Portobella mushrooms, Italian Speck, and fresh garlic, thyme and sage on a bed of thin al dente pasta. The beauty of pasta is that you can prepare a delightful feast for the eyes and the tastebuds in minutes! All you need is a few fresh ingredients, extra virgin olive oil, quality Italian durum wheat pasta, and your imagination! I tend to use whatever I have on hand :-> Buon appetito! ~ Epi
