Loaded Potato Crunch~~2.5# russet potatoes 4 T butter 1/2 C milk sea salt & pepper 1 1/2C shred sharp cheddar 4 slices crumbled bacon 2 green onions~~Cook potatoes. Drain & cook off excess water. Remove from heat. Add butter, milk, S&P & mash. Mix in 3/4C cheddar. 400F. Grease 15x10" baking sheet with olive oil, Spread potatoes. Sprinkle remaining cheese on top.Bake 40-45 min until bottom & edges are browned & crispy. Sprinkle bacon & onions on top. Cut into squares. Top with sour cream.
