Sunday Breakfast: CrockPot Hash Brown Breakfast Casserole
Parmesan and Spinach Orzo: Simple enough side dish to change up from the usual rice. (Downside: needed a lot of salt to flavor it up)
Strawberry Balsamic Chicken--4 chicken breast, 1c balsamic divided, 1 pint strawberries chopped, 4oz fresh mozzarella balls chopped, 1/4 chopped basil: 1/2c balsamic & chicken in ziplock to refrigerate up to 5 hrs, bake 30 min. Boil then simmer remaining 1/2 cup balsamic to reduce by half. Combine strawberries, basil and mozzarella for caprese topping. Top chicken, drizzle with reduced sauce
Power Breakfast Food: Peanut Butter & Banana Smoothie- In a blender, process 1 sliced banana, 1/4 cup quick-cooking oats, 1/4 cup nonfat plain Greek yogurt, 1/2 cup skim milk, 1/2 cup crushed ice, 1 tablespoon natural peanut butter and a pinch of cinnamon until smooth.
Crock-Pot Honey Mustard Chicken & Roasted Potatoes 1 chicken; ⅓ c. grainy mustard; ⅓ c. honey; ⅓ c. oil; ¼ c. butter, softened; 3 lbs potatoes, chopped; 1 onion, chopped; ½ c. oil; ½ Tbs salt; ½ Tbs pepper Put whole chicken in slow cooker. Whisk mustard, honey, oil,+butter,+pour over chicken. Cook HIGH 6 hours (or LOW 8 hours). Put chicken & some sauce in greased 9x13” baking dish. Add potatoes, onions, oil, salt,+pepper+stir together. Bake 425ºF 1 hour, til potatoes golden +crispy, stir 15 min.
