I don't know if this would take up too much space to store, but this could work for K-2 instead of being on the carpet. Maybe it would stop the endless struggle to get them all to stay in their spot on the carpet, sitting criss-cross- might help them focus better...also thought if there is a handout, it could be hidden beneath.
Fun seating idea for the classroom-have the students store white boards or other things in them.

Got some extra photo albums? Turn them into flashcard fun! Easy to write and wipe, just insert what you are working on. You could even just insert white paper and have them work on writing sight words, so many ways to use them! This would be great for fast finishers or in the hall while waiting
Fish in the Sea Counting Game-Math Center idea. I would do numbers 10-21 and start with simple counting/recognition; eventually turn it to an adding and/or subtraction game with dice. Could also do single dice and grab bag element where kids draw sea animal cards that say things like "add one" or "double number", etc.
craft sticks and velcro, these can be arranged to make shapes and letters (great busy bag idea!)
