Spinach, mozzarella (or use Feta or even Provolone), green onion (or finely chopped Leeks) and eggs make this Egg Bake a great, light dinner! I like to serve this with a bowl of melon or fruit salad, and a big glass of iced tea. TIP: A hearty sprinkle of Parmesan cheese on top gives this great flavor! ~~ Houston Foodlovers Book Club
Recipe for Spinach and Mozzarella Egg Bake
Mini Bisquick Quiches: Ingredients: 1 cup Bisquick 2 cups milk 4 eggs Preheat oven to 350. In a large bowl, mix the Bisquick, milk and eggs together until well combined. Butter a muffin tin and fill with quiche fillings of choice (ie: diced ham, Swiss cheese, onion...etc) Cover with the Bisquick Batter. Bake for about 25 minutes.
